Oatmeal Coconut Fun Chippers

Wow!  It's been soooo long!  Do I even know how to post anymore?  We will see.  I have been busy making some cookies and other recipes.  Hopefully, I can take some time in the next few weeks to get you caught up on everything we have tried.

First off, I made these cookies last summer.  Yes, I know.  They were REALLY good, though.  They were gone in no time flat so I'd say they are definitely a favorite.
Oatmeal Coconut Fun Chippers
They were a really easy cookie to mix up and bake.  I don't remember wanting to change anything about these.  Here is the recipe:

Oatmeal Coconut Fun Chippers
1 1/2 cup firmly packed brown sugar
1 cup butter, softened
1 tablespoon milk
1 tablespoon vanilla
2 eggs
2 1/4 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups rolled oats
1 cup coconut
1 (12 oz) pkg mini candy coated choc bits OR 1 1/2 cup semi-sweet choc chips

Directions:
1 Heat oven to 375.
2. In large bowl, combine brown sugar and butter; beat until light and fluffy.
3. Add  milk, vanilla and eggs; blend well.
4. Stir in oats, coconut and baking bits.
5. Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.

Bake at 375 for 9-13 minutes or until light golden brown.  Cool 1 minute before removing from cookie sheet.
